Many of my personal training and virtual personal training clients struggle with eating breakfast and have difficulties getting their kids, and sometimes themselves, to eat vegetables. This muffin can solve all of those problems within the walls of its fun-little muffin cup. It's packed not only with zucchini but with spinach! Spinach, for goodness sakes. And the best news is, you can't even tell! This isn't one of those veggie packed foods where you can taste the vegetables. I really only taste the applesauce and the blueberries. If you wanted to up your vegetable count, you could even add shredded carrots if you wanted to! (Just make sure that you always drain some liquid from shredded carrots and/or zucchini before mixing it up).
