I was honestly shocked at how delicious this was as I was not used to eating eggplant without it being breaded and fried.  

I had honestly never used eggplant in a recipe before, and it was a goal of mine to find something to make that included this pretty, summertime veggie. Insert Cheesy Eggplant Roll-ups from Tasty. I adapted the recipe to make it a bit healthier, with lower fat ricotta cheese, and more logical in the step by step process. Note that this recipe requires some prep time as you need to dehydrate the eggplant slices before you start cooking.
